Ingredients
- 1 ½ lbs (680g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tablespoon vegetable oil or olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated (or 1 teaspoon ground ginger)
- ½ teaspoon chili flakes (optional, for heat)
- 1 cup (240ml) coconut milk (or chicken broth for a lighter version)
- ½ cup (125g) Oulala (Classic, Spicy or Extra spicy) peanut butter (Depending on your desired spice level.)
- 2 tablespoons soy sauce
- 1 tablespoon lime juice (or lemon juice)
- 1 tablespoon honey (or brown sugar)
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika (optional, for extra flavor)
- Salt and pepper, to taste
- Fresh cilantro or parsley, for garnish
- Cooked rice, to serve
Instructions
- Prepare the Chicken: Season the chicken pieces with a pinch of salt and pepper.
- Sauté the Aromatics: Heat the oil in a large skillet or pan over medium heat. Add the diced onion and sauté for 3-4 minutes until softened. Stir in the garlic, ginger, and chili flakes (if using), and cook for another 1-2 minutes until fragrant.
- Cook the Chicken: Add the chicken pieces to the pan and cook, stirring occasionally, until browned on all sides (about 5-7 minutes). The chicken doesn’t need to be fully cooked at this stage as it will finish cooking in the sauce.
- Make the Peanut Sauce: Reduce the heat to medium-low. In the same pan, add the coconut milk, peanut butter, soy sauce, lime juice, honey, cumin, and smoked paprika. Stir everything together until the sauce is smooth and well combined.
- Simmer: Let the chicken simmer in the peanut sauce for about 10-15 minutes, stirring occasionally, until the chicken is fully cooked, and the sauce has thickened slightly. If the sauce gets too thick, you can add a splash of water or more coconut milk to thin it out.
- Taste and Adjust: Taste the sauce and adjust seasoning as needed—add more soy sauce for saltiness, honey for sweetness, or lime juice for acidity.
- Serve: Serve the peanut butter chicken over cooked rice and garnish with fresh cilantro or parsley for a burst of color and flavor
Optional Additions:
- For added texture, sprinkle with crushed peanuts or toasted sesame seeds.
- You can also toss in some steamed veggies like broccoli or snap peas during the last few minutes of cooking to make it a more complete meal.
