Dish of Oulala Peanut Butter Chicken

Oulala Peanut Butter Chicken

Ingredients

  • 1 ½ lbs (680g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tablespoon vegetable oil or olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated (or 1 teaspoon ground ginger)
  • ½ teaspoon chili flakes (optional, for heat)
  • 1 cup (240ml) coconut milk (or chicken broth for a lighter version)
  • ½ cup (125g) Oulala (Classic, Spicy or Extra spicy) peanut butter (Depending on your desired spice level.)
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice (or lemon juice)
  • 1 tablespoon honey (or brown sugar)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika (optional, for extra flavor)
  • Salt and pepper, to taste
  • Fresh cilantro or parsley, for garnish
  • Cooked rice, to serve

Instructions

  1. Prepare the Chicken:
Season the chicken pieces with a pinch of salt and pepper.
  2. Sauté the Aromatics:
Heat the oil in a large skillet or pan over medium heat. Add the diced onion and sauté for 3-4 minutes until softened. Stir in the garlic, ginger, and chili flakes (if using), and cook for another 1-2 minutes until fragrant.
  3. Cook the Chicken:
Add the chicken pieces to the pan and cook, stirring occasionally, until browned on all sides (about 5-7 minutes). The chicken doesn’t need to be fully cooked at this stage as it will finish cooking in the sauce.
  4. Make the Peanut Sauce:
Reduce the heat to medium-low. In the same pan, add the coconut milk, peanut butter, soy sauce, lime juice, honey, cumin, and smoked paprika. Stir everything together until the sauce is smooth and well combined.
  5. Simmer:
Let the chicken simmer in the peanut sauce for about 10-15 minutes, stirring occasionally, until the chicken is fully cooked, and the sauce has thickened slightly. If the sauce gets too thick, you can add a splash of water or more coconut milk to thin it out.
  6. Taste and Adjust:
Taste the sauce and adjust seasoning as needed—add more soy sauce for saltiness, honey for sweetness, or lime juice for acidity.
  7. Serve:
Serve the peanut butter chicken over cooked rice and garnish with fresh cilantro or parsley for a burst of color and flavor

Optional Additions:

  • For added texture, sprinkle with crushed peanuts or toasted sesame seeds.
  • You can also toss in some steamed veggies like broccoli or snap peas during the last few minutes of cooking to make it a more complete meal.

Enjoy your rich, creamy and savory Oulala peanut butter chicken!
